Smackhouse Blues & Barbecue didn't start with a business plan. It started with a smoker, a backyard, and a conviction that Waterloo deserved barbecue that actually tasted like someone cared.

We smoke every cut low and slow — no pressure cookers, no shortcuts. A good brisket takes 14 hours. Good ribs take 8. If you're hungry in 20 minutes, this isn't the place. But if you're hungry for something real, pull up a chair.
